Canadian BBQ Spit Rabbit (serves 4)

1                              1 fryer rabbit

Sauce

1 cup                       250 mL ketchup

¼ cup                    60 mL balsamic vinegar

½ cup                    125 mL Canadian maple syrup

¼ cup                    60 mL brown sugar packed

1 tbsp.                    15 mL honey mustard

 

Combine all sauce ingredients in a bowl.  Place fryer rabbit in the middle on a large piece of tin foil.  Cover rabbit with sauce mix and wrap with tin foil and then wrap again with tin foil so sauce mix doesn’t leak out.  Marinate in refrigerator for 8 hours or overnight.

 

When rabbit has been marinated, poke wrapped rabbit with barbecue spit and barbecue over medium heat for 2 hours.  Once cooked, open tin foil and the rabbit meat will be juicy and fall of the bones.
