Sweet and Sour Rabbit Meat Balls (serves 6-8)
Rabbit Meat Balls
2 lbs. ground rabbit
1 lb. ground pork
3 egg
½ cup 125 mL crushed croutons
1 tbsp. 15 mL teriyaki sauce
1 tbsp. 15 mL minced garlic
¼ cup 60 mL chopped onion
1 tsp. 5 mL pepper
Sauce
1 350 mL jar of pineapple sauce
1 540 mL can of pineapple pieces (drained)
2 large green peppers finely chopped
1 large onion finely chopped
1 tsp. 5 mL lemon juice
2 tbsp. 30 mL all-purpose flour
Rabbit Meat Balls: Combine all meat ball ingredients into a mixing bowl and mix well. Shape into 1 ½ inch (3.8 cm) balls. Arrange on a large ungreased baking sheet. Bake meat balls in oven at 500˚F (260˚C) for 15 minutes until light golden brown.
Sauce: Combine all sauce ingredients in a 5 to 7 quart (5 to 7 L) slow cooker and mix well together. Add cooked rabbit meat balls to slow cooker and keep on warm until serving. Serve over rice and enjoy.
