Puff Pastry Rabbit Pie (serves 4-6)

2 lbs.                      ground rabbit

1                              large onion finally chopped

2 tbsp.                   30 mL minced garlic

1 tsp.                      5 mL pepper

½ tsp.                    2 mL salt

6                              large potatoes cut up

                                water

1                              frozen puff pastry thawed

 

Combine first 5 ingredients in a frying pan and cook.

 

Boil water in large pot and place potatoes in boiling water, cook until soft, drain and return to pot.  Add cooked rabbit meat to soft potatoes and mash together well.

 

Place 1 puff pastry in a 10 inch (25 cm) pie plate, then add mixture to center of pastry and push out to fill sides.  Then place other pastry on top of pie making small holes to let steam out.  Cook in oven at 350˚F (175˚C) for 35 minutes and let cool for 5 minutes before serving.  Great served with gravy, Enjoy.
