Rabbit Meat Loaf (serves 4-6)

2 lbs.                      ground rabbit

1 lbs.                      ground pork

2                              eggs

½ cup                    125 mL finely chopped onion

¼ cup                    60 mL finely chopped celery

¼ cup                    60 mL finely chopped red pepper

¼ cup                    60 mL finely chopped green pepper

1 tsp.                     5 mL salt

2 tsp.                     10 mL pepper

1 can                      156 mL tomato paste

1 tbsp.                  15 mL minced garlic

 

Combine all ingredients in a large bowl and mix well.  Pack firmly into an ungreased 9 x 5 x 3 inch (22 x 12.5 x 7.5 cm) loaf pan.  Bake in oven at 350˚F (175˚C) for 1 ½ hours and let cool for 5-10 minutes before cutting and serving.  Enjoy.
